Ratnagiri Estate is one of India’s most distinguished coffee terroirs, perched in the misty Western Ghats of Chikmagalur and stewarded by the Patre family since 1927. Under Ashok Patre’s leadership, the estate has become a modern benchmark for Indian specialty coffee uniting heritage, sustainability, and precision-driven processing. Grown between 1,150–1,400 MASL under rich silvery-oak canopy, the cherries ripen slowly before undergoing meticulous hand-selection and lot-tracking. This microlot we showcase at Reserved is the same coffee used by Yajur Gambhir in his Brewers Cup routine which is crafted through Ratnagiri’s signature Hydro Honey Process, an elevated and highly controlled variant of honey processing. In this method, freshly harvested cherries are first hydro-washed and density-sorted to isolate only the highest-quality fruit. They then enter a phase of water-regulated fermentation, where temperature and microbial activity are carefully monitored to encourage clean, vibrant flavour development while preventing overfermentation. After fermentation, the parchment is dried with a calculated amount of mucilage intact that is allowing the sweetness and complexity of a honey process, but with the added clarity, structure, and refinement that water-assisted fermentation provides. This thoughtful balance of science and craft produces a cup that is both juicy and exceptionally clean. In the final profile, the coffee reveals vivid notes of wild berries, passionfruit, dried fig, pear, and delicate florals, supported by a juicy medium acidity and a long, refined finish.
