At Vergel Estate, Marta Bayter and her sons, Shady and Elias, have transformed their farm through a relentless focus on variety, processing, and experimentation. What began as an effort to sustain the family farm has evolved into one of Colombia’s most progressive coffee projects, supporting not only their own production, but also neighboring producers through shared processing knowledge and access to specialty markets.

This lot is produced from Pink Bourbon, a variety celebrated for its structure and expressive sweetness. Processed as a Black Honey, the cherries retain a significant amount of mucilage during drying, allowing the coffee to develop greater depth, texture, and a darker fruit character while preserving clarity in the cup.

Drawing from years of experimentation with controlled fermentations and innovative processing methods, the Bayter family approaches each lot with precision, carefully managing fermentation, drying, and stabilization to shape balance and complexity without overwhelming the coffee’s origin character.

The resulting profile is dense yet articulate, carrying notes of blackberry, rum, and chocolate with a rounded sweetness and refined structure.

Roasted light, the intention is to preserve transparency and texture alike, allowing both the process and the character of Pink Bourbon to express themselves with clarity and restraint.
