Nestled in the highlands of Huehuetenango, Guatemala, Finca El Injerto is widely regarded as one of the world's most accomplished coffee farms. Managed by the Aguirre family for generations, the farm combines exceptional growing conditions with meticulous attention to cultivation, harvesting, and processing.

At elevations where cool temperatures slow cherry maturation, coffees develop greater sweetness, structure, and clarity. Every coffee produced at El Injerto is grown, processed, and milled on the estate, allowing complete traceability and an uncompromising focus on quality.

This lot is produced from Catuai, a variety prized for its balance, sweetness, and consistency. Unlike the fruit-forward naturals the farm is also known for, this coffee undergoes a traditional washed process. After selective harvesting, the cherries are depulped, fermented to remove the remaining mucilage, thoroughly washed, and then dried under carefully controlled conditions.

The washed process highlights the coffee's intrinsic character, emphasizing clarity, structure, and transparency in the cup while allowing the terroir of Huehuetenango to take center stage.

The resulting profile is comforting yet refined, revealing notes of caramel, popcorn, mint, and chocolate, supported by a rounded sweetness and clean finish.

Roasted light, the intention is to preserve the coffee's natural balance and clarity, allowing the character of both Catuai and El Injerto to express themselves with precision and elegance.
